Ingredients

yam
(454 gr) peeled and cooked

butter
Salt and pepper

colored mini marshmallows
Instructions
Peel yam and cut into 6 – 8 pieces. Cover with water and bring to a boil. Reduce heat and simmer until fork tender, 25 – 30 minutes.
Drain and mash with a potato ricer until smooth in texture. Stir in butter and a sprinkle of salt and pepper.
Layer in small flat dish and cover with an even, single layer of colorful mini marshmallows.
Bake in oven at 350 until yams are warm, about 20 minutes.
Broil a few minutes if you like the marshmallows to have a bit of golden color…….but do be careful, they will burn in a flash.
