Spicy Roasted Chicken Salad with Yogurt Dressing

We recently found mini spoon tomatoes and sprinkled a few on the salad.

Ingredients
  

Chicken:

  • 500 gr chicken thighs boneless and skinless
  • 3 TBSP vegetable oil
  • ½ TBSP ground coriander
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. turmeric
  • 1 tsp. oregano dried
  • ½ tsp. salt
  • ½ tsp. pepper
  • 1 TBSP (6 gr) green onion, finely sliced
  • 4 TBSP cilantro chopped and divided
  • 1 TBSP lemon juice plus wedges to garnish

Salad:

  • ½ head Iceberg lettuce slivered
  • Tomatoes cut in half or quartered depending on size
  • Hot sauce to garnish if desired

Yogurt Dressing:

  • ½ cup (117 gr) yogurt (6 CHO/3/4 cup)
  • ¼ cup (53 gr) Hellman’s Real Mayonnaise
  • 1.5 tsp. fresh lemon juice or white vinegar
  • Salt and pepper to taste

Instructions
 

  • Pre heat oven to 450.
  • Cut chicken thighs into 2 – 3-inch cubes.
  • In a small dish mix the vegetable oil, ground coriander, paprika, cumin, turmeric, oregano, salt, pepper, green onion and 2 TBSP chopped cilantro.
  • Mix marinade with the cut-up chicken and let rest on the counter for 15 minutes.
  • Meanwhile sliver lettuce and place on a large serving platter.
  • Mix Yogurt dressing ingredients and adjust seasonings. Add a little more lemon juice or vinegar if desired.
  • Add 1 TBSP lemon juice to the chicken and marinade just before placing in the oven. Mix to incorporate.
  • Place chicken pieces on a large baking sheet without crowding.
  • Cook in the oven for 15 minutes, flipping halfway.
  • Depending on the size of your chicken pieces, the chicken could be done after 15 minutes. If not continue to cook until clear juices run through.
  • Place chicken on the lettuce. Sprinkle tomatoes and drizzle with Yogurt Dressing and remaining cilantro.
  • Add lemon wedges and any extra dressing on the side with pitas or rice and hot sauce if desired.

Notes

Spain is close enough to the Middle East for us.  A traditional Rioja pairs perfectly.  Fresh and fruit forward.
 
If you prefer a white wine, start with a crisp Sauvignon Blanc to balance the tangy yogurt dip.
