A gyro (pronounced close to hero, only more like “yero”, is meat cooked on a vertical rotisserie; then shaved off and eaten in a pita with pretty much the same accompaniments.This very simple marinade works well with chicken and pork.
Cover 4 – 6 wooden skewers with water in a flat dish and leave to soak for 30 minutes.
Cut chicken into cubes and mix marinade. Pour marinade over chicken and toss.
Leave chicken and marinade at room temperature for 15 minutes.
Skewer chicken pieces ½ inch apart from one another so that the meat cooks evenly.
Cook chicken until juices run clear, which is about 15 – 20 minutes for us.
Serve with any of the accompaniments you prefer. Tzatziki, Hummus, Greek Salad, Pita Pockets, Greek Potatoes, Greek Rice, Tortilla Chips (Gluten Free).

Because we accompany our Souvlaki with Hummus, Tzatziki and Greek Salad, the Mediterranean flavors beg for an Old-World Red Wine. But not too big, the chicken is mildly seasoned.We would stay away from a Full-bodied Cabernet Sauvignon.We’ve paired with:• Louis Jadot Bourgogne Pinot Noir 2018
