Winter Salad

Winter Salads can be just as good as summer ones, using fruit such as Pomegranates and late season Granny Smith Apples. This salad disappears at the Christmas potluck, or any potluck for that matter.

Winter Salad

Use our Summer Salad Dressing recipe or a premade good quality fruity dressing. Just pay attention to Carbs.
Our Farmer’s Market has some wonderful premade dressings that we use in a pinch.
Course Salad
Cuisine Canadian, Mediterranean

Ingredients
  

  • 6 – 8 cups (177 gr) Romaine lettuce
  • ½ small (69 gr) Granny Smith Apple, with skin
  • ¼ cup (37 gr) Pomegranate seeds
  • ¼ cup (40 gr) Dried cranberries
  • 1/3 cup (50 gr) Whole Walnuts
  • ½ cup (90 gr) Feta Cheese, crumbled
  • 1 recipe Summer Salad Dressing

Instructions
 

  • We have eaten leftovers the next day, because romaine lettuce will hold up a bit better than some other lettuces. It is best eaten the day it is made.
  • Cut or rip lettuce and rinse with a salad spinner. Let dry on a towel until mostly dry.
  • Cut pomegranate in half and bend to remove seeds.
  • Toss lettuce with dressing of your choice, then add the remaining ingredients, topped with pomegranate.

Notes

We served this salad with pork tenderloin and a light bodied red.
