Saganaki – Greek Fried Cheese

Saganaki îs a perfect hot weather snack. It can be any number of small dishes prepared in a small frying pan, but most common is fried cheese, served with a spritz of lemon. It’s also flambeed after being fried in many Greek restaurants for a big presentation!

Saganaki

Saganaki means “little frying pan,” and the type of cheese varies. Most common is graviera but many stores name small pieces of cheese “Saganaki”.
We generally just go with whatever is available.

Ingredients
  

  • 1 TBSP olive oil
  • ½ TBSP (4 gr) cornstarch
  • Saganaki
  • Lemon

Instructions
 

  • Dip cheese; both sides in the cornstarch. Smooth over with your fingers if need be.
  • In a small non-stick frying pan heat olive oil over medium/high heat.
  • Add cheese, fry for 2 minutes and flip. Fry another 1 minute or until golden on both sides.
  • Serve immediately with a squeeze of lemon.
  • You can eat with bread, but generally it’s eaten as is just with the lemon.

Notes

Fried Cheese pairs very well with a cold Sparkling wine, like Prosecco or an off-dry Riesling.
