As the seasons change, our cooking and menus change. Many fruits and vegetables are available year-round, but they do have peak seasons and influence our menus. But that’s not to say there isn’t a barbeque on a winter day or a pot of something simmering on a rainy summer day.
Wine availability varies and price points do matter. We will select wines from a region and identify our favourite vineyards; so, if a French style Rose works or a dry Italian, you are not beholden to the Vineyard only.
Spring brings brighter, warmer days and the craving for stews and pot roasts is suddenly gone. Fish and salads have more appeal. While looking for the first crocuses and robins, a crisp cold glass of white, rose or sparkling outside seems possible.
After a Pandemic Year, outdoor entertaining may become real compared to our solitary meals, quiet books and fires.
Summer cooking is about light, simple meals, flavours, local produce and barbeques. It is a time for outside.
Some drinks just scream summer – Spritzers – Campari, Aperol and White Wine. And the red wine shows up when there’s meat on the grill!
Fall brings thoughts of returning inside. Just as we embraced the longer days of summer, there is something refreshing about the gorgeous autumn colors, cooler evenings and bountiful crops. A time to return to the kitchen.
Winter fireplaces are again welcomed, and hearty casseroles with root vegetables appear. Everyone long home from travels and the cabin, winter is a time to again gather and celebrate over long slow cooked meals.
