Granny Smith Baby Greens Salad
Granny Smith apples are available year-round, but we tend to use them in salads during fall and winter months. Cranberries dried with apple juice pair beautifully with pumpkin seeds and chèvre.
Granny Smith Baby Greens Salad
Serve family style or make up individual plates.Belberry Royal Selection, Cameroon Mango vinegar is available at specialty shops. Cameroon (country in Central Africa) produces some of the best mangos in the world.

Ingredients
- Salad:
- 6 cups Baby Greens
- ½ medium (88 gr) Granny Smith apple
- ¼ cup (40 gr) Dried Cranberries sweetened with apple juice
- ¼ cup (25 gr) Pumpkin Seeds, unsalted
- 1/3 cup (90 gr) Chevre
- Vinaigrette:
- ¼ cup olive oil
- 2 TBSP Cameroon Mango Vinegar
- ½ tsp. Dijon mustard
- ½ tsp. (6 gr) honey
- 2-3 grinds each salt and pepper
Instructions
- Mix vinaigrette ingredients in a small bowl and whisk to incorporate.
- Cut apple into bite size pieces just prior to serving.
- Place baby greens on the serving dish and toss with the dressing. Next add the apple and cranberries and toss again.
- Top with pumpkin seeds and Chevre cheese.
- Serve immediately.
Notes
The tart apples and Chèvre in this salad pair wonderfully with a crisp Sauvignon Blanc; particularly if you serve the salad prior to the main course.
