Brown Butter Scallops with Romesco Sauce

Brown Butter Scallops on top of Romesco Sauce is purely elegant dining, and so very easy. Romesco is not intended to be fiery hot, but add more pepper flakes or cayenne if you prefer, but be mindful of the delicate and sweet scallops.

Brown Butter Scallops With Romesco Sauce

There are almonds in the original recipe from Spain, but Sunflower Seeds, Pumpkin Seeds or cauliflower can be nut free replacements.
Scallops are so sweet and gentle in flavour, you want to be careful with any additions, except butter, salt and pepper.

We serve this dish with Saffron Rice and a simple green salad.

Ingredients
  

  • 3 – 4 scallops per person
  • ¼ cup Romesco Sauce per person

Instructions
 

  • Prepare Romesco Sauce earlier in the day or even a few days before, Warm just before serving.
  • Prepare Brown Butter Scallops and serve immediately on top of Romesco.

Notes

We loved a Pinot Noir with this meal.  The scallops and Romesco were perfect together as was the wine, rice and salad.
