Lobster Tails can be found in warm and cold waters. The quality is best from the cold waters.

Lobster Tails

Instead of boiling lobster tails try broiling. Serve with Clarified Butter, a tender cut of beef, vegetables and a salad.

Ingredients
  

  • 2 – 3 lobster tails
  • Clarified butter
  • Salt and pepper

Instructions
 

  • Pre heat broiler and move rack second from the top. You want to cook the lobster tail through and not burn it.
  • Cut lobster tails along top, lengthwise and pull apart shell a little so that the lobster meat will cook under the broiler.
  • Butterfly (cut the meat of the tail down the center, about ½ inch deep). Baste with clarified butter, salt and pepper.
  • Broil 5 – 10 minutes until lobster meat is opaque.

Notes

Hands down a Chardonnay or Chablis match perfectly with the sweet lobster and clarified butter.
If you prefer a red wine, we loved a Tuscan red.
