Stock with Pasta and Asparagus

This is a favourite spring luncheon meal, especially when you pull out home-made Stock – Chicken or Turkey from the freezer. Only use home-made stock in this simple yet elegant starter.

Stock with Pasta and Asparagus

Some of the best meals are the simplest. The start to a nice lunch for 2.
The asparagus tips add a gentle flavor to the broth.

Ingredients
  

  • 2 cups home-made stock
  • 6 asparagus tips
  • 1 cup cooked pasta

Instructions
 

  • Start cooking the pasta in boiling, salted water.
  • Bring stock to a low boil.
  • Turn off the heat and add asparagus tips about 5minutes prior to serving the soup.
  • Serve immediately.

Notes

A Chardonnay works with this rich and silky broth, infused with asparagus. We serve this for lunch and have never tried to pair a red wine……..yet!
