Rotel Tex Mex

Rotel Mexican Style Tomatoes date back to the 1940’s. Available now in various spice levels, the original recipe with zesty green chilies and spices does heat up a dish. Rotel Tomatoes are not the same as salsa, and became a famous addition to queso.

Rotel Tex Mex

Serve this quick Tex Mex over rice or with Taco chips and various accompaniments. Mild Rotel Tomatoes are available if you prefer a softer spiced dish.

Ingredients
  

  • 1 lb. (454 gr) ground beef, chicken or turkey
  • 1 TBSP olive oil
  • 1 – 9 oz can (284 ml) Rotel Original Tomatoes
  • 1 cup (180 gr) black beans, rinsed and drained
  • 1 cup (263 gr) Tostados Medium Salsa
  • ½ cup (55 gr) celery, diced
  • 1/3 cup (60 gr) jalapeno pepper, diced
  • 1 cup (112 gr) Cheddar Cheese, grated

Garnish with:

  • Sour Cream
  • Cilantro
  • Radish
  • Chives
  • Lime slices
  • Olives
  • Jalapeno pepper

Instructions
 

  • Heat olive oil in a skillet. Add hamburger and break apart as it cooks.
  • Add celery to hamburger. Add jalapeno now if you like the peppers soft. We prefer more crunch and add them after the hamburger has cooked and is drained.
  • Drain cooked hamburger and return to the skillet.
  • Add Rotel Tomatoes, salsa, and jalapeno pepper. Bring to a boil, reduce heat and simmer 20 minutes uncovered.
  • Meanwhile heat broiler and move rack to second from the top.
  • Add the black beans and stir to incorporate.
  • Top with grated cheese and garnish with a little jalapeno pepper slices if left over.
  • Broil for 10 minutes until golden.
  • Serve immediately with garnishes, chips and/or rice.

Notes

Great for game day and a cold beer!
 
If you want wine, we like a light to medium red.
