Chili Baked Potatoes

Baked Potatoes are called Jacket Potatoes in the UK and when topped with chili these are hearty enough to be the main meal. Start with a salad and crisp vinaigrette.

Chili Baked Potatoes

Build your own for one or a crowd, with a Chili Potato Bar and offer up southwestern flavours to the usual bacon and chive condiments. Depending on the crowd, we will serve Chili Con Carne or Turkey Chili, both work equally well.
Use Russet potatoes, they are the best for baking.

Ingredients
  

Russet potatoes, baked

  • Salt and pepper
  • Butter
  • Sour cream
  • Chili Con Carne
  • Turkey Chili
  • Cheddar Cheese grated
  • Green onions chopped
  • Bacon cooked and chopped
  • Jalapenos seeded and chopped
  • Cilantro or Parsley
  • Hot Sauces
  • Red Pepper flakes

Instructions
 

  • Pre heat oven to 400 and cook as many potatoes as you need. Try to find potatoes about the same size so baking time is consistent.
  • Pierce each potato with a fork and set in oven for 45 – 60 minutes, until cooked through.
  • Remove potatoes from oven and let rest a few minutes before serving.
  • Cut potatoes in half almost the whole way through.
  • With a fork fluff the potato flesh a bit and sprinkle with salt and pepper. Add a little butter.
  • Then start to build your potato with anything desired.

Notes

So many wine pairings are determined by the boldest flavours. If grandchildren are at the event, and the Chili’s are milder, then a Chianti or light bodied red wine works very well.
If serving to a crowd of adults, and adding the cayenne to the pot, then a medium bodied red wine fits the bill.
