Seafood Cocktail Spread

Seafood Cocktail Spread became popular with the Best of Bridge series – that became our go to books in the 1970’s and 80’s. That truly was Haute Cuisine. This is our adapted version and the spread really must be made with from scratch Cocktail Sauce.

Seafood Cocktail Spread

It's a favourite addition to the Halloween appetizer table, Friday Finger Foods, game day and any other special occasions.

Ingredients
  

  • 4 oz. (125 gr) cream cheese
  • ¼ cup (57) gr sour cream
  • ½ cup Cocktail Sauce
  • 1 can shrimp or crab
  • 1 cup (75 gr) Cheddar Cheese, grated
  • Herbs to garnish
  • Lemon slices to garnish

Instructions
 

  • Make a double recipe of Cocktail Sauce and refrigerate until ready to use.
  • Mix cream cheese and sour cream until smooth. Rinse and drain shrimp or crab. (If using crab squeeze it over the sieve so that most of the moisture is drained away.) Fold into cream cheese mixture.
  • Spread the cream cheese mixture in an even layer on a platter.
  • Spread Cocktail Sauce over the cream cheese.
  • Top with grated cheese and garnishes.
  • Cover and refrigerate until ready to serve with tortillas or crackers and vegetables.

Notes

With addition of the cream cheese mixture to the Cocktail Sauce, our preferred paring was a Rose followed by a Riesling. A chilled Chianti was really nice if looking for a red wine.
