Pear and Baby Greens Salad with Balsamic Reduction

Pear and Baby Greens Salad with Balsamic Reduction

Pears were a favourite food of the ancient Romans and Greeks – believed to be “gifts from the gods”. Pears are so versatile, and thought to be one of the oldest cultivated fruits originating in present day Western China.

Pear and Baby Greens Salad with Balsamic Reduction

The simplicity of summer salads is so much better with seasonal fruits. Drizzle a little Edible Gardens, Special Reserve Balsamic Reduction (barrel aged) on top of baby greens and pears. This reduction is by far our favorite, and can be ordered online from Edible Gardens, Surrey B.C.Dress up the salad by adding a mild fruit flavored stilton or briny Feta if you wish.

Notes

Depending on whether you add cheese or not may change the way you may want to pair this salad with a wine.
Without any cheese, we absolutely loved an Old-World Riesling.
We’ve paired:
• Wegeler 2006 Rudesheimer Berg Schlossberg Riesling
With Feta Cheese we loved a French Sancerre. Even though Sancerre wines are made with Sauvignon Blanc grapes as are the famous wines from New Zealand; we prefer the milder French flavours.
We’ve paired:
• Chateau de Sancerre 2019
With a mild fruity Stilton, we have yet to find a pairing we prefer. We do like the salad combination though. As we taste and experiment, we will post how it goes.
