Cool Green Dip

Bursting with fresh herbs, this dip goes really well with Fish/Shrimp Tacos or Lime Pork Skewers.  We also serve it with Pico de Gallo and Tortilla Chips for a light snack.

Cool Green Dip

This dip is equally good with parsley or cilantro. There is a mild and spicier version below. If young children are at the gathering the lighter version is served. The only difference is the amount of jalapeno.

Ingredients
  

  • ½ cup (115 gr) full fat sour cream
  • ¼ cup (5 gr) parsley or cilantro chopped
  • 2 TBSP (15 gr) finely diced jalapeno, seeds/membrane removed – (use 4 TBSP (30 gr) for a bit spicier version)
  • 2 TBSP (10 gr) finely diced green onion, tops
  • ¼ tsp. salt

Instructions
 

  • Place all dip ingredients in a small food processor or blender.
  • Puree until smooth and keep in refrigerator for a minimum of an hour to let the flavors blend.

Notes

This side dish is wonderful on hot days. Whether you serve as part of the taco bar or with Lime Pork Skewers, the main dish will determine the wine pairings.
