Chicken Parmesan

“Chicken Parm” is a much loved and popular Italian dish. Rich tomato sauce, juicy chicken breasts and cheese baked and served with Caesar salad.

Chicken Parmesan

Decades ago, when diagnosed with Celiac’s, there were very few bread options. So, we changed a family favorite and left the bread crumbs off the chicken. It became the new normal and again a family favorite, saving calories and carbs! There is always Caesar Salad nearby.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 680 ml can (710 gr) Hunt’s Tomato Sauce
  • 2 cups (149 gr) fresh Mozzarella
  • 1 cup (70 gr) grated Parmesan Cheese
  • Fresh basil to garnish

Instructions
 

  • Pre heat oven to 350
  • Heat oil in frying pan and brown chicken on both sides, 3 minutes per side, medium/high heat until golden.
  • Spread 1 cup tomato sauce in bottom of a lasagna style pan. Add chicken in single layer and pour remaining sauce over chicken.
  • Grate or slice Mozzarella and top with grated Parmesan Cheese.
  • Bake covered with tin foil for 40 minutes until golden brown.
  • Remove tin foil, keeping chicken on middle rack and turn on broiler. Broil for 5 minutes and remove from oven.
  • Serve with pasta, vegetable and or salad.

Notes

Rich Tomato Sauces and Parmesan Cheese pair beautifully with Medium Bodied Reds. Think Sangiovese and Montepulciano grapes from Italy. We’ve honestly never paired Chicken Parmesan with a white wine.
